Rose, chamomile and vanilla — the evening infusion
A soft, floral pot made at nine o'clock, when the day needs a full stop rather than another screen.

Chamomile brewed with truly boiling water turns bitter and hay-like within minutes. Let the kettle sit for sixty seconds after it clicks and the whole character of the pot changes — apple, honey, something almost like custard.
What you need
- 2 tbspdried chamomile flowerswhole flowers, not dust from a teabag
- 1 tbspdried rose petalsfood-grade and unsprayed
- 0.5vanilla podsplit, or a strip of its used husk
- 1 small striplemon peelpared with a knife, no white pith
- 700 mlwaterjust off the boil, around 90°C
- Raw honey, optional
