Sea buckthorn grows wild along the Danish coast and tastes like nothing else — sour, oily, faintly tropical, orange in a way apricots only gesture at. Most people meet it as a sweetened syrup and never learn what it actually is.

What you need

  • 2 tspsea buckthorn puréeunsweetened, frozen or bottled
  • 1 tspraw honeyunpasteurised, local if you can
  • 250 mlwaterwarm, not hot — hand temperature
  • 1 tiny pinchsea salt
